He works with local winer\u00adies, help\u00ading them describe their wines and write tast\u00ading notes.<\/p>\n<p dir=\"ltr\">When he arrived at <a href=\"https:\/\/fincaadalgisa.com\">Fin\u00adca Adal\u00adgisa<\/a> with his col\u00adlec\u00adtion, I admit I expect\u00aded a guess\u00ading game.<\/p>\n<p dir=\"ltr\">It wasn\u2019t.<\/p>\n<h3 dir=\"ltr\">How Nick Works<\/h3>\n<p dir=\"ltr\">Nick guides you through aro\u00admas rather than sim\u00adply ask\u00ading you to guess.<\/p>\n<p dir=\"ltr\">Is it flo\u00adral or fruity? If it\u2019s fruit, is it white, red or cit\u00adrus? Fresh or dried? Sweet, green or spicy?<\/p>\n<p dir=\"ltr\">Each ques\u00adtion helps you get a lit\u00adtle clos\u00ader. He helps you find the words for some\u00adthing you could recog\u00adnise but couldn\u2019t quite name.<\/p>\n<h3 dir=\"ltr\">Wild Rocket<\/h3>\n<p dir=\"ltr\">While we were talk\u00ading about aro\u00admas, I thought of wild rock\u00adet.<\/p>\n<p dir=\"ltr\">When we were lit\u00adtle, we used to find it grow\u00ading in the fields. We didn\u2019t even know what it was. It was bit\u00adter, and we didn\u2019t eat it.<\/p>\n<p dir=\"ltr\">Years lat\u00ader, as an adult, every time I tast\u00aded rock\u00adet, I was back in those days in the coun\u00adtry\u00adside.<\/p>\n<p dir=\"ltr\">I sup\u00adpose every\u00adone has their own col\u00adlec\u00adtion.<\/p>\n<h3 dir=\"ltr\">What We Are Never Taught<\/h3>\n<p dir=\"ltr\">As chil\u00addren, we are taught colours. Red, green, blue. Then shapes, num\u00adbers, words, mul\u00adti\u00adpli\u00adca\u00adtion tables and dates.<\/p>\n<p dir=\"ltr\">Nobody teach\u00ades us to smell.<\/p>\n<p dir=\"ltr\">We do it all day, of course: cof\u00adfee in the morn\u00ading, rain on dry earth, a grape\u00adfruit cut open, the gar\u00adden after water\u00ading. But we almost nev\u00ader stop to pay atten\u00adtion, and we have very few words for what we find.<\/p>\n<p dir=\"ltr\">Smelling is not just some\u00adthing we do instinc\u00adtive\u00adly.
